ABOUT THE PROJECT

The aim of the project is to evaluate the quality of the meat produced from extensively bred cattle in the protected area of ​​Delta Axios and to create a branded meat product.

Holistic approach for extensive cattle farms in the Axios area, with the main purpose of identifying and utilizing the meat produced for the production of special products and meat products.

This approach will be implemented both at farm level and at animal level.

At the first level, the following animal management practices (feeding and grazing, genetic improvement, reproduction, hygiene and veterinary care, animal welfare), the economic management of farms (sale of products, prices and quantities, value and quantity) will be recorded through questionnaires inputs, paid work, etc.). The technical and economic data will be used in the economic analysis of the holdings and in the investigation of their development possibilities.

At the animal level, the quality characteristics of the produced meat will be evaluated based on classic methods (Ph/color/tenderness assessment, taste tests by trained testers, etc.), and tests to detect microbiological and physicochemical changes at defined time intervals.

The analysis will also be framed by data on the pasture resources of the area. Data on natural grassland productivity and forage quality will be collected and correlated with meat quality. In addition, a grazing capacity study will be prepared using data from available bibliographic sources and satellite images on an annual basis.
